Very recently, a book describing current ancient starch studies "Ancient Starch Research" (R. Torrence & H. Barton eds.) was published. The authors are spirited archaeologists advancing ancient starch researches, and then you can see a broad overview of this field.
I hope this kind of archaeobotanical textbooks will be published in Japan.

Today, I've just got this book. It contains many excellent photos and figures of ancient starch.
