I purchased "edible memo pad" (URL is in Japanese), and observed it with microscope. This material is made from potato starch, water, and olive oil. An edible ink is also attached.
400 times magnification with bright field. All grains are gelatinised.

400 times magnification with polarised light. Due to the ink colour, it is hard to see grain morphologies.
This paper contains lots of starch, and so it is easily broken. This kind of microscopy is interesting for me.
